Classic Fish Fry

When we need a quick family meal we get out the panko and get busy. It’s a Jordan recipe so comes with no measurements “just go with what feels right”.

Ingredients:

Flour
Egg
Panko
Dill
Black Pepper
Garlic Powder
Salt
Oil
Fish of your choosing (halibut, lingcod, rock cod)

Instructions:

Heat about an inch deep of oil in a pan

Get 3 bowls.

In bowl one put flour seasoned with dill and black pepper.
In bowl two put fork beaten egg.
In bowl three put panko seasoned with dill, garlic powder and salt.

Cut your fish into desired sizes. Pat with paper towel to remove excess moisture. Dredge in flour, dip in egg, then dip in panko mixture. Fry in heated oil until batter is browned and fish is cooked.

We have a big family so have to cook in batches. Typically we’ll get a glass dish with paper towel on the bottom to put the done fish int he oven until we’ve cooked everything.
